Rhubarb Cake

1/2 cup shortening
1 1/2 cup brown sugar
1 egg beaten
2 cups flour (sifted)
1 tsp baking soda
1 cup buttermilk
1 1/2 cup rhubarb
1/2 cup sugar
1 tsp cinnomon

  1. Preheat the oven to 350 degrees.
  2. Mix the first two ingredients together until they become cream.
  3. Add the beaten egg to the cream that you made in the previous step.
  4. Sift the flour and baking soda together and add in.
  5. Add the buttermilk.
  6. Fold in the rhubarb.
  7. Pour into a 9x9 pan.
  8. Mix the sugar and cinnamon and sprinkle over the top of the cake batter.
  9. Put the cake in the oven for 30-35 mimnutes.

Whole Wheat, Oatmeal and Rasin Muffins

1 cup whole wheat flour (about 4 3/4 ounces)
1/4 cup granulatged sugar
1/4 packed brown sugar
2 tablespoons untoasted wheat germ
2 tablespoons wheat bran
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups quick cooking oats
1/3 cup chopped pitted dates
1/3 cup raisins
1/3 cup dried cranberries
1 cup lowfat buttermilk
1/4 cup canola oil
1 teaspoon vanilla extract
1 large egg, lightly beaten
1/2 cup boiling water
Cooking spray

1. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 7 ingredients (through salt) in a large bowl, stirring with a whisk. Stir in oats, dates, rasins, and cranberries. Make a well in the center of mixture. Combine buttermilk, oil, vanilla, and egg; add to flour mixture, stirring just until moist. Stir in boiling water Let batter stand for 15 miniutes. 2. Preheat ovent ot 375 degrees. 3. Spoon batter into 12 muffin cups coated with cooking spray. Bake at 375 degrees for 20 minutes or until muffins spring back when touched lightly in the center. Remove muffins from pans immediately; place on wire rack. Yeild: 12 servings (serving size: 1 muffin).

Sonya's Baked Beans

1/2 lb. ground meat
1/2 cup chopped onions
1/3 cup sugar
1/3 cup brown sugar
1/3 cup Barbecue Sauce
2 TBL Molasses
1/4 cup ketchup
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. chili powder
2 tsp. Dijon mustard
1 can kidney beans drained
1 can butter beans drained
1 can pork-n-beans not drained
10 slices of bacon

Cook beef and onions and drain. Cook bacon then cut it up in small pieces. I dry in paper towel to soak up excess grease. I cut out a lot of the grease and just use the meat portion of the bacon. Mix sauce ingredients and pour over beans. Mix in drained meat and bacon. Bake at 350 for 1 hour.

I have omitted the meat and doubled the beans with the same amount of sauce and that worked fine if you want to omit the meat. I also cut the chili powder because it can get very hot. Especially if you double the recipe. I would recommend not doubling the chili powder. It gets very hot then.

Jane Hewitt's Greek Salad Recipe

This never turns out the same way twice - but here goes

1 Head Romaine lettuce
1 Package Feta (Made in Greece is best)
1/3 Jar Calamata olives
1 package or net bags sliced cherry tomatoes
1/2 red onion
2 lemons juice of
good extra-virgin olive oilTwice as much as lemon juice
to tasteoregano and black pepper

Wash and dry lettuce. Mix juice from lemons with olive oil achieving 1/3 lemon juice and 2/3 olive oil - crush oregano and add black pepper. Put feta, cherry tomatoes, and dressing in a bowl together for as long as possible (overnight) in the refrigerator. Serve cold!

Dad's Barbque Spice Mix

12 oz Lowery Seasoned Salt
4 oz Course ground pepper
4 oz Onion Powder
4 oz Garlic Powder

Mix all elements, rub onto meat, then coat meat with olive oil. Insert garlic cloves into the meat and coat with horseradish.
